Garlic Parmesan Mashed Potatoes

These potatoes are so creamy and smooth.  They go perfectly with my Cilantro Thai Chicken.  They are the perfect side for any grilled dish!

Ingredients
  1. 6 medium red potatoes
  2. 2 cloves garlic, peeled and minced
  3. 1/2 teaspoon extra-virgin olive oil
  4. 2 tablespoons unsalted butter
  5. 3/4 cup whole milk
  6. 1/2 cup grated parmesan cheese
  7. pinch of salt
  8. freshly ground black pepper to taste
Instructions
  1. 1. Fill a large pot with water and add the potatoes. Bring to a boil. Reduce heat and simmer for approximately 20-25 minutes or until the potatoes are tender when tested with a fork. Remove from heat and drain well.
  2. 2. While the potatoes are cooking, in a small saucepan add the milk, olive oil, 1 tablespoon butter, and garlic. When the milk is heated through (be careful not to scald the milk) add 1/4 cup parmesan cheese and stir until it melts. Remove from heat and set aside.
  3. 3. Preheat the oven to 350 degrees.
  4. 4. Mash the potatoes with the heated garlic milk mixture, adding the milk a little at a time for desired consistency. Add salt and freshly ground black pepper to taste.
  5. This last step is optional.
  6. 5. Transfer the potatoes to an oven-proof bowl. Add the remaining 1/4 cup parmesn cheese to the top of the potatoes and place in the oven and bake for 3-5 minutes or until the cheese has melted. Remove from the oven and add the remaining tablespoon butter to the top of the potatoes. Serve while hot.
