Cilantro Thai Chicken

This chicken is one of the most moist and juicy I have ever had.   The amount of flavor is incredible! Also, in case you are dieting, it is considered perfect for those doing Paleo (the caveman diet).

 Here are the only four ingredients you will need.  I know…few ingredients pack some big flavor!

Put these ingredients into your food processor.

Place the chicken breast in a bowl with the marinade.  Place it in the fridge for 20 minutes to soak in all of that wonderful flavor.  

Heat grill to 350 degrees.

Cook for 6 minutes each side.  After removing from the grill, wrap in foil for 10 minutes and let sit.  This allows the flavors to marry together and keeps the chicken moist!

Ingredients
  1. 4 boneless skinless chicken breasts
  2. 2 garlic cloves, coarsely chopped
  3. 1/2 cup cilantro
  4. 2 tablespoons asian fish sauce or 1 tablespoon of GF soy sauce
  5. 1 tablespoon toasted sesame oil
Instructions
  1. 1. Place all the ingredients above in a food processor and process until smooth.
  2. 2. Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator.
  3. 3. Prepare your grill or broiler.
  4. 4. Cook until juices run clear. You can also check my cutting a small section of meat and checking the middle.
  5. 5. Let rest in foil for 10 minutes before serving to keep meat moist.
