For the meat
  1. 2 lbs ground beef
  2. 2 packets taco seasoning
  3. 1 1/2 cups water
For the potatoes
  1. Coconut oil, for frying
  2. salt, to taste
  3. pepper, to taste
  4. 2 cups cheddar cheese (more if you like a lot of cheese)
  5. sour cream
  6. tortillas
Instructions
  1. 1. Brown the ground beef in a large skillet. Drain off the grease. Add back to pan. Add the taco seasoning and water and simmer for 5 minutes. Set aside.
  2. 2. Cook Mexican rice according to package directions (unless you make your own).
  3. 3. Chop potatoes into one inch chunks leaving the skin on. Heat a skillet over medium heat. Add coconut oil to skillet. When the skillet is hot, add potatoes. Add salt and pepper to taste. Cook until potatoes are tender.
  4. 4. Assemble the burrito. Spread sour cream on tortilla. Add cheese, meat, and potatoes. Fold and enjoy!!!
