Twice Baked Loaded Potatoes

These potatoes are cheesy and topped with bacon!  You cannot go wrong!

Ingredients
  1. 4 lg baked potatoes
  2. 8 slices of bacon
  3. 1 cup sour cream
  4. 1/2 cup milk
  5. 4 T butter
  6. 1/2 tsp salt
  7. 1/2 tsp pepper
  8. 1 c. shredded cheddar cheese, divided (1/2 will be used on top)
  9. 8 green onions, sliced and divided (1/2 will be used on top)
Instructions
  1. 1. Preheat oven to 350 degrees F. Bake potatoes for one hour.
  2. 2. Meanwhile, place bacon in a large deep skillet. Cook over medium high heat until evenly browned. Drain, crumble, and set aside.
  3. 3. Allow the cooked potatoes to cool for 10 mins
  4. 4. Slice potatoes in half long ways and scoop potato innards into a large bowl; save skins.
  5. 5. To the potato flesh in the large bowl, add sour cream, milk, butter, salt, pepper, 1/2 c. cheese, and 1/2 of the green onions. Mix with a hand mixer until well blended and creamy. Spoon mixture into potato skins. Top each with remaining cheese, green onions, and bacon.
  6. 6. Bake for another 20 mins.
