This dish has it all!  It is meaty, hearty with potatoes, and full of protein from the eggs.  And to top it off, cheese!

Ingredients
  1. 1 lb kielbasa, sliced
  2. 4 large russet potatoes, sliced
  3. 1/4 cup onion (optional)
  4. 8 eggs
  5. 1/2 cup cheese (of your choice)
  6. 1/4 cup butter
  7. salt and pepper to taste
Instructions
  1. Heat butter over medium heat in large skillet. Once the skillet is hot, add the onions. Saute until translucent.
  2. Add the potatoes. Cook until tender enough to poke with fork or until crisp. This is a preference (We like ours crispy!).
  3. In another skillet, cook kielbasa over medium heat until the edges are browned. Remove from heat and add to the potatoes.
  4. In a small bowl, whisk together the eggs. Pour the eggs over the potatoes, kielbasa, and onion in the skillet. Cook until there is no more gooey egg mixture. It should look like scrambled eggs on top and throughout.
  5. Once cooked through, top with the cheese of your choice and serve!
