Ingredients
  1. 8 oz cheddar cheese, shredded
  2. 1/4 cup butter
  3. 1/4 cup whole wheat flour
  4. 2 cups milk
  5. 1 teaspoon salt
  6. 1 teaspoon salt
  7. 1/4 teaspoon pepper
  8. 5 medium potatoes, thinly sliced
  9. 1/2 medium onion, diced
Instructions
  1. 1. Melt butter over low heat in medium saucepan.
  2. 2. Blend in flour, then add milk, all at once.
  3. 3. Cook, stirring constantly until slightly thickened.
  4. 4. Add all but small handful of cheese, season with salt and pepper and continue to cook until cheese melts.
  5. 5. Remove from heat
  6. 6. Layer cheese sauce and potatoes/onions beginning and ending with cheese sauce. Sprinkle the small handful of reserved cheese on top.
  7. 7. Bake at 350 degrees Fahrenheit for about 1 hour or until cheese is bubbly and potatoes are soft.
