Paleo Chicken and Cabbage Stir-Fry

I am so excited to share this recipe with you!  My sister-in-law, Hailei has shared it with me.  Our family loves crossfit!  Paleo and crossfit go hand-in-hand, so here is a good recipe for those of you trying to do your crossfit and eat Paleo.  It’s healthy and delicious.  Enjoy!

Paleo Chicken and Cabbage Stir-fry

Ingredients
  1. ∙ 4-­6 Boneless Skinless Chicken Breasts
  2. ∙ 1 lb. Bacon
  3. ∙ 12 oz. White Cabbage
  4. ∙ 12 oz. Red Cabbage
  5. ∙ 5 tbsp Walnut Oil
  6. ∙ 1 tsp. Minced Garlic
  7. ∙ 2 tbsp Lemon Juice
  8. ∙ 3 1/2 oz. Walnut Halves (or whatever your favorite nut is)
  9. ∙ 2 tsp Dijon Mustard
  10. ∙ 2 tsp Poppy Seeds
  11. ∙ Salt & Pepper to taste
*Optional Ingredients
  1. ∙ 8 Scallions
Instructions
  1. 1. Bake/Grill/Boil Chicken until cooked all the way through. Cube or slice into strips. Set to the side.
  2. 2. Cook Bacon. Chop. Set to the side.
  3. 3. Shred the White and Red Cabbage thinly. Set to the side.
  4. 4. Heat Walnut Oil in preheated large wok or large heavy bottomed skillet.
  5. Add Cabbage and Garlic (*Scallions). Cook, stirring constantly, for 5 minutes.
  6. 5. Add Chicken, Bacon, Lemon Juice, Nuts, and Dijon Mustard. Season
  7. to taste with Salt & Pepper. Cook for a further 5 minutes, until Cabbage is tender.
  8. 6. Transfer stir­-fry to a warm serving bowl, sprinkle with Poppy Seeds.
  9. Serve immediately. Be healthy and chow down!
