Chinese Fried Rice

Fried rice is the perfect companion to any chinese dish.  This is our version.  It is simple and easy.  There are actually only a few ingredients needed to make this tasty side.  You won’t believe the flavor!  It is comparable to the hibachi restaurants we have been to.  I hope you enjoy it as much as we do.

Ingredients
  1. 4 T butter
  2. 2 cups pre-cooked rice
  3. 3 eggs
  4. 1 cup peas and carrot blend
  5. 1-2 tsp sesame oil
  6. 1-2 T liquid coconut aminos or soy sauce (your preference)3 cloves garlic
  7. 2 t minced ginger or ginger powder (to taste)
Instructions
  1. 1. Prepare rice or use leftover rice.
  2. 2. Heat wok to medium high heat.
  3. 3. Drop 1 T butter into wok. Add eggs and scramble until just done (not runny or wet looking. Remove from heat.
  4. 4. Drop 1 T butter into wok. Add carrots and peas and cook until tender.
  5. 5. Add last 2 T of butter and add garlic and ginger to wok. Saute until fragrant (only needs about 30 seconds). Add rice and eggs. Be sure to constantly move the rice around. Add the sesame oil and coconut aminos or soy sauce.
  6. Serve immediately with your favorite main Chinese dish. Enjoy!
