Veal Parmagiana

Our family tried this new recipe tonight.  It was delicious.  This was our first time trying veal and I have to say, I was scared at first; but it was very tasty.  Veal Parmagiana is a quick and easy meal.  It takes less than 30 minutes to make and it is nothing short of sophisticated.

Ingredients
  1. 4 - 2 oz. Veal Cutlets, pounded 1/8" thick
  2. 1/2 cup all purpose flour
  3. 2 eggs, beaten
  4. 1 cup Italian bread crumbs
  5. 1/4 cup parmesan cheese
  6. 2 tbsp Olive oil
  7. salt, to taste
  8. pepper, to taste
  9. 4 slices provolone cheese
  10. 1 cup marinara sauce
Instructions
  1. 1. Heat oven broiler. Place flour, eggs, and bread crumbs in separate shallow dishes. Season veal with salt and pepper. Dredge veal in flour, then dip in eggs; coat in bread crumbs and transfer to a plate. Heat 2 tbsp. oil in a 12" skillet over medium-high heat. Working in batches, and adding remaining oil as needed, cook veal, flipping once, until golden, 3–4 minutes. Transfer to a baking sheet in a single layer. Spoon 1/4 cup marinara sauce over each cutlet; top with 1 slice provolone and sprinkle with parmesan cheese. Broil until cheese is golden and bubbly, 4–5 minutes. Garnish with parsley and put on top of spaghetti or serve on it's own.
