Oatmeal Bars

My Mother-in-law and I have always been close.  Our relationship is very unique to most of the movies you see today.  She is not my
Monster-in-law or any of those other titles.  Instead, I look up to her and we share a bond that not many woman have with their mother-in-law.  One thing we have always shared is our love for food and making food.  When John and I met, 10 years ago, his Mom would make these Oatmeal bars for him.  To this day, these are John’s favorite cookie. They are the perfect mix of chewy and sweet.  

Oatmeal Bars

Ingredients
  1. 1 cup butter, softened
  2. 2 cups brown sugar, packed
  3. 2 eggs
  4. 1 tsp vanilla
  5. 2 cups flour, sifted
  6. 1 tsp baking soda
  7. 1/2 tsp salt
  8. 2 cup quick cooking oats
  9. 1/2 cup walnuts, chopped
  10. 6 oz semi sweet chocolate chips
Instructions
  1. 1. Preheat oven to 400 degrees.
  2. 2. Grease a 15" x 10" x 1" jelly roll pan or a 13" x 9" baking dish.
  3. 3. Cream together butter and sugar in large bowl.
  4. 4. Add eggs and vanilla.
  5. 5. In a second bowl, sift the flour. Add in the baking soda and salt.
  6. 6. Add this to the creamed butter and sugar mixture.
  7. 7. Add the cooking oats.
  8. 8. Press the dough down in the greased baking pan.
  9. 9. Sprinkle nuts and chocolate on top.
  10. 10. Bake for 25-30 minutes.
