Rice Pilaf

This is some of the best homemade rice pilaf that I have ever tasted.  It goes very well with fish or poultry.

Ingredients
  1. 1 cup Instant brown rice
  2. 2 teaspoons of olive oil
  3. 1/4 cup chopped green onion
  4. 1/4 cup chopped celery
  5. 2 cups chicken stock
  6. salt and pepper, to taste
  7. just a pinch of cayenne pepper
Instructions
  1. 1. Heat chicken stock over medium heat.
  2. 2. While the chicken stock is heating up, heat a skillet over medium-high heat. Add the olive oil to the pan. When hot, add the rice. Brown the rice. Then, add the onions and celery. Cook until the onions start to become tender.
  3. 3. Add the rice mixture to the stock. Turn heat down to low and cover. Let cook for 5 minutes. (after all, it is called minute rice and this doesn't take long to cook)
  4. 4. Sprinkle in the salt, pepper, and cayenne. Taste test it and then add more if needed.
  5. 5. Plate and enjoy!
