Sausage, Egg, and Cheese Bagel Sandwiches

These sandwiches taste so good and they are much healthier than the ones from McDonald’s or from the freezer section at Wal-Mart.  My dad used to make these for me when I was little.  My husband has caused me to tweak the recipe by changing from toast to bagels.  You could also put these on English Muffins.  It is fast and tasty; one of the best combinations!

Ingredients
  1. 2lbs ground pork sausage
  2. 6 cinnamon raisin bagels (or other flavor bagel of your choice)
  3. 6 eggs
  4. 6 slices of cheddar cheese (we slice our own from the block)
  5. For the butter
  6. 4 Tablespoons butter, softened
  7. 1/2 Tablespoon cinnamon
  8. 2 tsp sugar
Instructions
  1. 1. Shape the ground pork sausage into patties. You want the patties to be bigger than the bagel because they will shrink a bit. Place sausage patties in a dutch skillet on medium heat. Cook until no longer pink in middle. Set aside
  2. 2. In a small bowl, whisk one egg. Add to skillet. When the edges look firm, flip the egg. Cook other side until the yolk and whites are firm. Add slice of cheese on top to melt. Set aside. Repeat this 5 more times for the other sandwiches.
  3. 3. Meanwhile, put bagels in toaster and toast to desired crispiness.
  4. 4. While you are waiting on the bagels to toast, make your butter. Add softened butter to a small bowl. Then, add the cinnamon and sugar and combine.
  5. 5. Spread onto bagel. Add the sausage patty on the bottom half of the bagel. Place the egg and cheese on top, and cover with the bagel top!!!
  6. 6. Plate them and serve!
  7. Enjoy!
