Farmer’s Breakfast Skillet

This is one of those “everything in one skillet” dinners!! It is so convenient and delicious.  Try this yummy 30 minute meal!

Ingredients
  1. 1 lb bacon, cooked and crumbled
  2. 3-4 medium russet potatoes, diced
  3. 8 eggs
  4. 1/4 c onion
  5. 4 T butter
  6. salt, to taste
  7. pepper, to taste
  8. garlic salt, to taste
Instructions
  1. 1. On a large cutting board, dice potatoes. Set aside. Heat skillet over medium heat. When skillet is hot, add butter and potatoes to skillet. Season potatoes with salt, pepper, and garlic salt. Turn every so often so they do not stick. Cook until tender and the outside starts to brown and crisp. Meanwhile, cook bacon, in large dutch skillet, until crispy.
  2. 2. After cooking bacon, remove from pan and crumble and set aside. Drain all but 2 T of bacon grease from skillet. Add the onions to the skillet and cook until transparent.
  3. 3. Add potatoes and bacon to skillet. Whisk eggs in bowl and add to skillet. Cook until eggs are combined and scrambled through.
  4. 4. Add cheese to top and serve.
  5. Enjoy!
